Colombia’s Quebraditas Bourbon Sidra is notable for its precise harvesting and innovative processing methods. More than 90% of the cherries are harvested at optimal ripeness, then meticulously hand-sorted and floated to ensure exceptional quality.
The process incorporates controlled oxidation and the use of maceration starters from rare coffee varieties like Geisha and Sidra. Fermentation occurs over 36 hours at carefully regulated temperatures with specialized yeasts, followed by a thermal shock wash alternating between hot and cold water to preserve the coffee’s aromatic profile.
This refined yet traditional Colombian technique produces a coffee with elegant sweet floral notes reminiscent of Eldelflower, Mango, bright acidity, well-defined structure, and a creamy, persistent finish. Its fermented nature imparts a bold yet delicate body.
