So we have 3rd harvest from El Puente, this time we selected only washed coffee from the farm as find it more complex clean and bright, as well our selection focus also change with years to more clean coffee , but would say we will never miss the experimental lots as they more then fermented coffee its a sparkle of ideas.
We roasted at Loring 35 , with medium size batches 8 kg each. fast and intense roast at the beginning with a slow drop in the middle of roast. We get a clean fabulous cup of coffee its sweet with a nice citrusy notes forwarded with hints of berries .
